A few months after the coffee tree flowers, fleshy red fruits appear: coffee cherries, each containing two coffee beans.

After harvesting, the fruits are sorted according to their quality, the thin skin around the coffee beans is removed and then they too are sorted.

Then comes the essential stage of roasting, which releases the aromas and gives the distinctive flavour to each type of coffee. Roasting is carried out between 180°C and 240°C for a length of time that varies depending on the desired colour and taste.

To avoid any side effects, coffee should be enjoyed in moderation – about two or three cups a day (equivalent to three espressos).

The best way to enjoy organic coffee

Before drinking, Aymara Food coffee must be roasted. Depending on the length of the roasting process, the coffee will be mellow, smooth or bold.

  • A light roast will give a slightly red brown bean, with a mellow taste.
  • A medium roast will produce a darker bean, with a smoother or more marked flavour.
  • A longer roast will give a darker bean, with a fuller-bodied flavour reminiscent of charcoal and caramel.

Coffee is generally enjoyed as a hot or cold drink. You can make cappuccinos, flavoured coffees, mocha coffees, iced coffees, smoothies, oatmeal and almond milk coffees and much more.

It can be used in cooking to make certain desserts (tiramisu, coffee éclair), biscuits, muffins, cakes, but also savoury sauces and other recipes.
