AYMARA FOOD COCOA

Our cocoa nibs and powder come from the beans of the Theobroma cacao (literally “food of the gods“), a shrub that grows in the fertile soils of South American forests.

Cocoa is best known as the main ingredient of chocolate. However, cocoa was originally used by the Aztecs and Mayans for ceremonies, or as a means of payment, medicine and even a health food. It was then introduced into Europe by the Spanish.

Aymara Food’s cocoa products are intended for consumers who are looking for the nutritional benefits of cocoa. Our cocoa products are “raw” and have been processed at temperatures below 45ºC, in order to preserve as much as possible the natural properties of the beans.

Le cacao est un produit aux multiples usages qui saura vous apporter de nombreux bienfaits. Le beurre de cacao est issu de la fève de cacao, qui est torréfiée, concassée, puis pressée. Une fois pressées, les fèves donnent cette huile végétale d’origine 100 % naturelle. Lorsqu’elle refroidit, cette huile se transforme en beurre de cacao, sa couleur va du jaune ivoire au brun.

Ce beurre brut, qualité cosmétique et alimentaire, possède tous les actifs présents dans la fève, lui conférant des propriétés anti-oxydantes, apaisantes et amincissantes reconnues. Il donne une senteur gourmande de chocolat à vos préparations.

Nos produits à base de cacao sont « bruts » et ont été transformés à des températures inférieures à 45 ºC, afin de préserver au maximum les propriétés naturelles des fèves.

Aymara Food offers exceptional cocoa beans from various varieties: Trinitario, Nativo (Chuncho), Piura Blanco, Almelonado (forastero) among others.

We work directly with the producers of “Cacaos Finos de Aromas” throughout Latin America. Our organic cocoa beans are characterised by fruity and floral flavours as well as nut and malt notes.

Our 100% organic and fairtrade cocoa beans are intended for chocolate makers who work with the beans and create chocolate bars with exceptional taste (bean to bar concept).

Our Peruvian cocoa nibs are obtained by coarsely grinding organic Nativo cocoa beans, fermented and dried in the sun. The final product is as crunchy as ever.

Cocoa powder is produced from 100% organic Nativo cocoa beans from shrubs that grow in Peru in mineral-rich volcanic soil. The powder is obtained by a traditional cold pressing process using fermented and sun-dried beans. The result is a pure, unmodified and unsweetened cocoa powder.
