Aymara Food Organic Amaranth

Less known than quinoa, amaranth is another “little seed of the Incas”. 
Amaranthus comes from the name of this plant in ancient Greek ἀμάραντος which means “unfading”. Indeed, amaranth has the reputation of not fading, especially with its calyx, the colour of which is everlasting. For this reason, amaranth is a symbol of immortality.
Amaranth is a very old plant of which there are many species in the world. All varieties are edible and produce about 80,000 seeds per plant.
It was revered as a “miraculous seed” by the Aztecs and Incas who attributed supernatural powers to it.
 
The best way to enjoy organic amaranth seeds
Amaranth seeds are cooked for 20 to 30 minutes in twice the volume of water. The slightly sticky texture is not to everyone’s taste, so you can put them in gratins, cakes, custards…
You can also heat the very small seeds in a covered frying pan to make popcorn.
Flour can replace 25% of the wheat flour in cakes and give them softness. When used with other flours (rice, corn), it can be used to make gluten-free breads and biscuits.
As for flakes, they are used to prepare porridge and muesli.
